I have had the great privilege of working under a few great traditional Japanese carpenters while living as a practicing Zen monk for over 7 years at two different Zen temples in Northern California (jikoji zen center, Tassajara Zen mountain temple) After leaving the monks life I was fortunate enough to land in san francisco working for Acapella Craftsmen for 8 years.
