Baking soda can damage some countertops, but it makes an excellent mild abrasive for removing stains on other countertops. For example, never use baking soda on quartz or glass countertops, but you can use it on laminate and tile. Stay away from using it on quartz because it can scratch and damage the counter, and glass is prone to scratches. Since baking soda is a mild abrasive, you can only use it on certain surfaces.

Never put a hot pan on epoxy countertops, as it may melt or show heat damage. Epoxy countertops can only handle temperatures of 150 to 300 degrees Fahrenheit, while pans regularly reach temperatures between 300 and 500 degrees Fahrenheit. If you have an epoxy countertop, always use a trivet or towel before setting down a hot pan.

Fortunately, there are many types of heatproof countertops. Granite, quartzite, concrete, and stainless steel are all fiery contenders. These surfaces work best in busy kitchens where hot pots, pans, and baking sheets are part of the daily routine. Plus, their durability means you get a long-lasting work surface that won’t flinch at a bit of heat or heavy use. However, many stone and concrete counters require a sealer, which is typically not heatproof.

The best type of wood for countertops is hardwood. Hardwood is much more durable and resilient than softwood, so it won’t scratch or dent as easily. Oak, cherry, maple, walnut, and teak are all popular options that are relatively common in North America. Some homeowners prefer to use pine or cedar, but make sure to seal your countertop to help prevent damage. Yellow pine fares better than white pine.

A minimum overhang of 10 to 12 inches is generally recommended to provide enough legroom and space for individuals to comfortably sit at the island. This overhang allows for proper alignment of stools or chairs under the countertop, ensuring occupants can comfortably tuck their legs beneath the island while seated. 

However, for increased comfort and functionality, some homeowners may opt for a larger overhang, ranging from 15 to 18 inches, which provides ample space for leg movement and allows for a more relaxed dining experience.
