If your technician uses machinery to dig the two access points, the job will likely be faster, whereas manual digging will take a bit longer and could push the project above six hours.

Shut-off valves, like any other piece of metal hardware, can corrode, age, get worn down, and eventually break or rust into place. Occasionally spray your shut-off valve with WD-40 to stall it from rusting. It can be helpful to open one or two faucets before turning on the water main again. Turning off the main shut-off valve will introduce some air into your pipes. Having at least one faucet open should allow the air to clear as the water refills the pipes. Try to open faucets far from the main shut-off valve and on the highest floor of the house.
