He listened to what I wanted, we agreed on a price, and he started the work right then. By early evening, him and his crew had jack hammered the kitchen floor, trenched from an island to the wall, installed/extended new gas line to the proper depth, backfilled everything and completed the project with concrete and a connection concealed in the wall cavity as requested.
