As long as you do it carefully, you can sand and restain hollow core doors. However, it’s risky because the veneers on hollow core doors are so thin that sanding and restaining might cause damage to the doors. If you do move forward with this project, sand the doors lightly with a medium-grit sandpaper.

You can open up more space between the door and the floor by sanding the bottom of the door, but it will take longer compared to using a hand planer.
