You do not need to drywall over most types of garage insulation. However, doing so can increase noise reduction, make the space more attractive, and keep children and pets from touching harmful fiberglass insulation. You should stagger drywall sheets to help prevent cracking. The joints between drywall sheets are the weak spots, so if you install drywall with seams aligned, you’ll create weak lines that run across the length of the wall and extend from floor to ceiling. But when you stagger drywall, the solid sections of panels will support the joints. This can prevent seams from cracking or separating due to fluctuating temperature and humidity, vibrations from movement inside the home, and gravity.

You may not need to use a drywall anchor, depending on what you're hanging and where you're hanging it. If you can nail or screw into a wooden stud, the wood will provide enough support and stability in many cases. If you're hanging something very lightweight, you can use picture hanging strips to hold it in place. 

Yes, it is possible to DIY install drywall, but it is a deceptively complicated process that can be quite frustrating if you don’t have experience. Using a utility knife to score and snap your drywall will minimize dust production, and a jab saw for cutting cutouts for boxes and fixtures will generate almost no airborne dust. Even if you use these methods, you should still wear a respirator and safety goggles to avoid damage to your lungs and eyes.
