The commercial guys wouldn't do it because it is a white glove situation and the residential cleaners wouldn't do it due to the size/complexity of the commercial fan motor. Tafari did an excellent job of protecting the space all around the grill and hood. One slip & there would have been grease splattered all over the extremely expensive stonework.
