However, it depends on things like the thickness of the mud, as well as the room’s temperature, humidity, and ventilation. Using thin layers of mud in a warm, low-humidity room with good airflow reduces average drying time. You also could speed up drying time by making use of hot drywall mud, which consists of a powder that you mix with water, instead of using pre-mixed mud. 

This depends on how much plaster is applied and in how many layers, but a decent estimate is around 150 square feet. If you are applying only two coats on a small wall, there is a chance you may only need one or two gallons for the entire project.
