Runners generally come in standard sizes, so you may need to approximate what would look best in your space.

Impervious or vitreous tile and vinyl flooring work best for the kitchen. These surfaces are non-porous (or have a very low porosity) that can stand up against spills, splashes, and plumbing leaks.
