We interviewed several contractors.  Chris the owner was one of the few to make the time to meet us when OUR schedule permitted.  He was also the only one who seemed to understand what our vision was.  We had really funky beams going across the center and Chris kept working on them until they didn't look like funky beams, now it looks open and airy.  We didn't know any of the terminalogy and he was very good at figuring out what we were talking about.  He helped us redesign the womens bathroom so it was user friendly and looked something out an upscale hotel .  With his help we made the kitchen area, caterer friendly and more functional for parties.
He helped make the whole center look like the meeting, reception and ballrooms of a upscale hotel with the color scheme flowing throughout. 
My  only suggestions for any one planning a big remodel like this.  Before he gets started, work with him to pick out the paint colors, carpet and tile.  You will need to go to the flooring store and buy some paint samples.  We changed paint colors three times and flooring twice. 
Make sure everyone is on the same page, so you don't add two tv's and media wiring at the last minute.
Find out the price range is before you pick tile.  It adds up fast
