It went very well. I called, and Dan was came by to take a look very quickly after my call. He had someone come in the very next day to start. It took two days for them to finish. I had calculated wrong, and was short about 6 sheets, so they brought in the additional drywall (and carefully brought it down the stairs) to finish the job.

The first day Dan just sent his crew (2 guys) to remove all of the damaged drywall and insulation.  They gutted everything and were careful to ask me if I wanted to re-use any of the insulation that still looked functional.  Since we had water damage, Dan recommended letting everything dry out for a day or two.  They came back two days later (Dan and the 2 guys) and installed the insulation I had bought along with replacing all of the drywall.  They taped and spackled everything so all that I need to do is paint.  Overall, they were quick and efficient and did a great job.  I would definitely use this company again.

Day 1: Dan (owner) came with helpers to start job. Helpers did 1st coat after Dan left. Day 2: Dan returned to do the second coat himself. Day 3: Dan returned to wet sand the second coat and smooth everything out. They missed one nail hole (which I didn't notice until I was repainting), and though Dan said I could call him if he missed anything, I just spackled it myself because it was so minor. Otherwise, they did a very good job and at a very fair price. Seems like they have a busy schedule, so others must agree. I will likely use this company again.
