I don't like to be without a good sharp knife when cooking so I don't like to use services where I have to wait a couple of days to get my knives back. The Perfect Edge sharpens your knives while you wait. They also pointed out how one of my knives had an imperfection on the edge closest to the handle. They fixed it for $5. I will be bringing my other knives to them soon.

This is a good place for fast, professional, sharpening of knives. My order was more expensive than usual because of two valuable carbon steel knives from Japan, one of which had to be ground down to repair some damage (chipped areas) on the cutting edge. The knife that was repaired is unusual in that it is only sharpened on one side (most knives are sharpened on both sides): Perfect Edge duplicated this sharpening method. They were also knowledgeable about the protective patina that had developed on the knife. I will definitely use this store again. Sharpening of standard household kitchen knifes is relatively inexpensive, and they will do it in about ten minutes while you wait (i.e. browse around the store).
