Authentic pâtisserie even in the sense of a legally controlled title (in France and Belgium) that may only be used by bakeries that employ a licensed maître pâtissier (master pastry chef). At least two of the pâtissiers have completed training at the École Nationale Supérieure de Pâtisserie (Yssingeaux). First-rate!
