I started Capehart Cutlery with the intention of developing innovative knife edges I learned in my travels. I have combined the best of different edges to create "The Educated Edge." This is a self adjusting edge. I can customize this edge to any type of meats and vegatables.

I would never have believed that I could get anyone to sharpen my knives the day before Thanksgiving.  I called their phone number and spoke with a woman.  She called William and he returned my call within 3 minutes.  He asked if I could meet him in 30 minutes near Trader Joe's in Granada Hills.  He took my knives to his mobile truck and was almost finished with them by the time I found a parking place.
He then told me about taking care of the knives.  His prices were very reasonable.  When I got home and used them I realized that they were probably sharper than when I first bought them.

Chris drives a big truck around to various locations.  You can schedule your visit based on where he will be in the city on certain days.  He was in my home neighborhood Saturday morning so I drove down.  Sewing shears are so sensitive to adjust properly.  This is the second time I've visited him to adjust my shears and both times they were returned like new!

They have a mobile service for those of us who live in a different area. They were there exactly on time and did a good job, I have more to take to them, just haven't had a chance yet.

It was very good, they do a great job sharpening the knives. I went to them, they have trucks that go to supermarkets and stuff like that, they tell you when they are going to be at a certain supermarket and you can make an appointment that way.

VentThey operate out of a truck, and service numerous restaurants, butchers, and grocery stores.  I called the number listed, told them where I was, and they let me know when they'd be in the area.  I ended up meeting them at the whole foods at the corner of Ventura & Canoga where they made short work of sharpening my knives.  They were very friendly and professional.

They are quite good as a matter of fact.  My wife was involved with them, but I don't think she would have any reservations about recommending them to other people.  It was quite satisfactory. It was a reasonable price.  Top notch.

My knives were dull and I wanted to get them sharpened in time for the holidays.
I took all 15 of my knives (paring, boning, serrated, all types) and met him at his mobile sharpening van in Irvine. He and his partner were quick and efficient. Maybe 20 minutes for all 15 knives.
The quality of the sharpening was such that later in the week I cut through some chicken bones without realizing it until I began preparing the chicken for cooking and noticed one of the legs looked a little stumpy. I did, after all, ask him out of all the knives to please put a really sharp edge onto the boning knife and, boy, did he

After sharpening the knives, and even though I considered myself to be knowledgeable about how to handle knives properly, Will spent a few minutes going over tips on keeping the knives sharper longer and also cautioned me on how to handle my newly sharpened knives when cleaning them. Which turned out to be excellent advice given the how sharp all the knives are--much sharper than any other service or shop I have used in the past.
The quality of his work is excellent,and the price exceptional (all the other cutlery sharpening services charged by the inch!!). Will charges a flat rate per knife regardless of how long it is.
I highly recommended his services and will definitely use him in the future for all my knife sharpening needs.

I called them & left a message. He called back & gave me some options - one being his son's mobile unit which would be at a restaurant in Long Beach. In the morning before I left to meet the son, I called him to check when he'd be there. Unfortunately, they were easily an hour late. I called the son's phone & he hung up on me so I called the dad. I called the dad up, asking if I was in the right place...I was nervous as a woman alone. When they arrived, they went to the restaurant first & followed them in, telling the owner to pass on the message that I was waiting. The son came back out, took my knives, sharpened them, & between the father & son, they decided to do it for free because of all the frustration which I really appreciated.

William came to our house and sharpened all of our knives! We love to cook, and sharp knives are critical. Chris has a great service, and the work quality was excellent. William, Chris's son, was personable, intelligent, and fabulous in his work. We are so pleased to have found a service we can rely on and we will have our knives sharpened by him regularly. William also gave us excellent advice on how to take care of our knives -- which we found extraordinarily helpful. This is a high quality, service-oriented company.

My knives were starting to get dull and I took the plunge to have them sharpened.  Nothing is better than cooking with a nice set of  sharp knives.  They are actually a lot sharper than they were when I purchased them.  A+ service

Let me start by saying it was the day before Thanksgiving and I had forgot to get my knives sharpened.  I sheepishly called to see if it was at all possible to have them done.  I expected a resounding "no" since it was so last minute.  To my surprise the happy voice on the other end of the phone said, "Yes, of course!"  But wait, it gets better, they come to you!  They were going to a restaurant for a service call and I said I could meet them there.  This reduces the price.  So, off I went!  I was met with a smile.  The bonus?  I got a great education in cutlery, how a knife should really be sharpened, and how to identify good sharpening from bad.  Even better, I found out Gary teaches knife skill at The Culinary Institute.  A great find!  I'll be back!

Suddenly, I couldn't stand my dull knives another minute. I searched Angie's List and contacted Capehart Cutlery because of their good reviews. I called, the phone was instantly answered, and we arranged for me to meet their truck at their current location immediately. Traffic delayed me but they assured me they would wait for me, and they did. William and Christoper speedily sharpened my knives and gave me maintenance tips. I was homeward bound with my newly sharpened knives in less than 10 minutes. The knives are a pleasure to use again.

Chris is the real deal when it comes to sharpening knives!! My son has a hunting knife that needed sharpening and we had no idea where to go. I saw great reviews for Capehart Cutlery online and decided to give them a call.  I arranged to meet him that afternoon at his home in Granada Hills where he said his truck would be.  I decided to also take my steak knives and a couple other paring knives which were dull.  When I got there the truck was set up and he said it would cost $21 to sharpen everything.  I was expecting to pay much more!  It only took about 10 minutes and the knives are amazingly sharp and like new again.  I would DEFINITELY use him again and in fact plan to take  the rest of my knives to him for sharpening.  He’s also a really nice guy!

I called Capehart Cutlery and arranged to meet him where he parks his van in Granada Hills. I arrived about two minutes late and he was setting up and ready for me. I showed him my knives and scissors and he told me it would cost $30 for all of them. I said to go ahead, and he sharpened them all on the grinders installed in his van. He also sells knives, and services many restaurants. I would definitely use this service again. There were no problems.
Since he works out of a van, he travels to different areas of the city, but mainly works in Granada Hills. He should be called at (818) 923-8087 or (818) 831-5959 to arrange an appointment.
